As part of my Quantity Food Production coursework, I completed 60 hours working in the kitchen at a long term care facility. I completed the following tasks during my time at the Courtyard Healthcare Center in Davis, CA:
- Cooked meals for 100 patients
- Made purees for patients on National Dysphagia Diet
- Assisted with receiving
- Worked on tray line
- Input dietary preferences on tray cards
- Followed proper food safety guidelines
- Performed kitchen inspection
- Shadowed both RD and dietary manager
